The life-changing addition to my diet

1 Corinthians 10:31

Do you desire to have a healthy diet, but don’t know where to start? I have a solution, which has helped me, and I’m hoping it will help you.

Every day, God gives us a new opportunity to “start over”  not only spiritually, but in every area of our lives.  One of those areas is eating.  Do you desire to eat healthily, but find yourself eating foods that aren’t best and feeling lousy about it by the end of the day? Tomorrow’s another day and I found this solution to be extremely helpful and easy!!

 

This little adjustment literally changed my life

 

I have struggled most of my life with some pretty serious illnesses and some not-so-serious but annoying symptoms, and can honestly say after over 30 years of various ailments, I feel amazing, have more energy than ever, am off all medications and have no chronic health issues at all!  In fact, I rarely even get a cold.

How it all started – way back when

I, along with 250 other students got food poisoning while I was living away at college.  After doing a lot of research on how this could happen, I decided to stop eating meat.  I became very interested in nutrition and as the years went on, I pretty much stopped eating additives, preservatives, chemicals, white bread, fast food, and processed foods.  Even while eating healthy though, I suffered from ulcerative colitis for many years, constant heartburn, headaches, high cholesterol, low blood sugar, and I was always tired.  I managed to stay off medication for the most part, which was a goal of mine, but got sick whenever I went off my “diet”.

 

The Little Change with the Biggest results

 

A few years ago, I had attended a class on superfoods.  I really enjoyed the class, took lots of notes and was determined to follow what the teacher recommended.  When I asked her if she ever cheated, her reply was very interesting….. and very freeing!  She said, “I don’t consider it cheating if 90% of my diet consists of superfoods.  It doesn’t matter what I eat for the other 10%.”  Now I’m sure she’s not eating twinkies, but if she wants a slice of pizza or an ice cream sundae once in a while, there’s no harm and no guilt.  I thought, “Hmmm, (by God’s grace) I can do that”.

 

Smoothies – the magic formula!!

Between what I learned from that class and doing some experimenting, I am at a point where I eat foods that are delicious and I feel great!  The biggest change was adding smoothies to my daily routine.

So basically, I have my detox water first thing in the morning and continue to drink it for the first couple of hours.  Then I make my smoothie.  I never have carbs in the morning.  I have low blood sugar, and I find that when I have carbs for breakfast, my blood sugar levels go way up and then come crashing down, so I feel lousy for the rest of the day.  If I ever crave pancakes, waffles, or toast (which is rare now), I have it later in the day.

Sometimes I change it up slightly, but the smoothie I make just about every day is as follows:

Ingredients

8 oz. Almond milk or coconut milk

1 Tbs. chia seeds soaked in water

1 Tbs. natural peanut butter

1 tsp. cacao powder

1 banana

1/2 cup of blueberries

1/2 cup of strawberries (cut up)

Instructions

Prepare your chia seeds in advance.  (This will be good to use for 3-4 days) Place 1 tablespoon of organic chia seeds in a small jar with 1/2 cup of water.  Leave in refrigerator overnight. The chia seeds that are soaked in water cleanse your colon of toxins as it gets digested.  That’s the best way to eat chia seeds.  If you don’t soak them before you ingest them, they will expand in your body and could possibly cause problems, especially if you have any esophageal issues.

Pour 1 cup of almond milk or coconut milk in a blender.  Add all other ingredients. Blend until smooth. Drink. Enjoy!  You can experiment with different amounts and different fruits to see what consistency and taste are best for you!!  I find these smoothies filling, so I don’t get hungry for a few hours.  By that time, it’s the afternoon and I’ve eaten really healthy and have had only about 200 calories!  I feel fantastic and I’ve gone years without symptoms from the ulcerative colitis!

Note:

Use natural peanut butter, which just contains peanuts, oil, and salt.  Sometimes, depending on the brand, the oils separate and you have to mix it every time you use it.  Teddy’s is my favorite brand because for some reason you don’t have to mix it and it tastes great!

I use cacao powder to balance out the sugar in the fruit.  Fruit a source of natural sugar, but can still raise your blood sugar levels.  The cacao powder not only has nutritional benefits but also keeps your blood sugar from spiking.

It’s best to use organic ingredients (especially the fruit) whenever possible.  The difference in price is not that much and the benefit is well worth it.

Nutritional benefits in this particular smoothie:

Almond milk or coconut milk – lactose-free, contains antioxidants, Vitamin A, calcium

Blueberries – very high in antioxidants, contains fiber, Vitamin C, Vitamin B6

Strawberries – contains Vitamin C, Vitamin K, fiber, folic acid, manganese, and potassium

Cacao – very high in antioxidants, contains iron, magnesium, and calcium

chia seeds – contains healthy omega3 fatty acids, protein, fiber, antioxidants and calcium

peanut butter – contains protein, potassium, and fiber

bananas – high in potassium, is an anti-inflammatory, helps with digestion and boosts energy

My favorite appliance, by far, is a single serving blender.  I’ve had one, made by Hamilton Beach, that costs about $15.00 and I’ve had it for about 4 years (using it every day).  It’s the only appliance I keep on my counter.

My intention is not to give medical advice at all.  It has just been my experience.  What I can say with confidence is that this smoothie is delicious, healthy and filling!
